Inspired by a dish my mom use to prepare, hubby came-up with this original version, Papa’s Mock Hungarian Stew:

For the meal hubby sautéed chopped onion, chicken thigh, potato, and carrots in olive oil; added chopped Shitake mushrooms, minced garlic paste, white pepper, fresh rosemary leaves, tomato juice, and Spanish olives; let simmer until reduced; plated and added whole wheat dinner rolls for sopping-up the sauce.

This meal makes use of the last of the New Year leftovers, New-Years-Platter Pasta Dinner:

For the dish, I chopped leftover New Year’s platter goodies into bite-size pieces; sautéed 10 bite-size beef chunks and 8 shrimp in olive oil and minced garlic paste; added the New Year goodies, 2 cups leftover pasta salad, a dash of white wine vinegar, and 1/2 teaspoon red chili pepper flakes; and sprinkled with a light layer of parmesan cheese.. As an accompaniment, reheated leftover deep-fried quails eggs on-a-stick with a soy sauce dipping sauce.

‘Tis the season for leftovers. This is an idea hubby came up with for extra New Year’s goodies, Papa’s New-Year-Platter Skillet Paella:

The meal was quite simple, hubby lightly browned uncooked rice in butter; and added saffron, chicken broth, julienned homegrown bell peppers, cherry tomatoes, and various remains from the New Year Platter. It was surpisingly tasty, but I think I would have crumbled the meatballs though.

This is a simple way to create a new flavor for leftovers, Papa’s Herb-Chicken Curry:

Hubby was feeling a little experimental again, for the meal he simply add chopped onion, dried curry powder, and (believe it or not) leftover mushroom gravy to the last of the Creamy Herb-Chicken Stew; then ladled it over a bed of rice. As a garnish, I added zasai and cracked black sesame seeds.

This is a simple and tasty meal hubby created using leftovers, Papa’s Creamy Herb-Chicken Stew:

For the meal, hubby used boiled chopped potatoes, carrots, and fresh broccoli; added leftover Crockpot Herb-Chicken with stock, cream, and flour for thickening; and served over rice.

With the weather changing, hubby thought he’d give the crockpot a go and did some experimenting with overnight cooking, Papa’s Crockpot Herb-Chicken Wraps:

For the meal, hubby mixed chopped fresh basil and rosemary, olive oil, dried tarragon flakes, white pepper, minced garlic paste, freshly-squeezed shikwasa juice, and chicken broth granules; poured the mixture over frozen chicken wings placed in the bottom of a crockpot; and cooked on low for 16 hours. Once done, the chicken meat literally fell off the bones. Hubby drained the liquid (sort of) from the chicken with a spoon; seperated the meat from the bones; and placed the meat in heated tortillas lined with iceberg lettuce and cheddar cheese. As an accompaniment, he added whole cherry tomatoes.

Although there are quite a few ingredients, this is a delightfully simple and tasty meal, Golden Maple Chicken Dinner:

Equipment and All Ingredients Needed

2 Frying pans 1 Microwave oven 2 Stovetop Burners 1 Can opener

1 Microwaveable container with lid 1 Knife 1 Cutting board

1 Large boneless chicken thigh

1 Can corn niblets

1 Small can sliced button mushrooms

2 Cups pre-cooked rice

3 Tablespoons maple syrup

2 Tablespoons olive oil

1 Tablespoon sesame oil

1 Tablespoon minced garlic paste

1 Tablespoon soy sauce

1 Tablespoon scallions

1 Tablespoon white pepper

1 Tablespoon almond slivers

1 Tablespoon butter

1 Teaspoon minced ginger paste

1 Teaspoon dried parsley flakes

1/2 Teaspoon chili powder

1/4 teaspoon turmeric

Fresh basil sprigs

Cranberry sauce

This quick and tasty mash consisted completely of leftovers (except the garnish), SOS Mash:

The last of the leftovers from the Hearty Chicken & Pasta Dinner and the SOS Wrap Dinner were combined; placed on a bed of leftover pre-cooked rice; and garnished with a fresh basil sprig and grated parmesan cheese.

1 Large skinless and boneless chicken thigh (cut into strips)

1 Can garbanzo beans with liquid

¼ Red onion (diced)

3 Shitake mushrooms (coarsely chopped)

1 Tablespoon fresh basil (chopped)

1 Tablespoon olive oil

1 Tablespoon minced garlic paste

1 Tablespoon minced ginger paste

1 Tablespoon butter

1 Tablespoon white pepper

1 Tablespoon dried parsley flakes

1 Teaspoon powdered cumin

1 Whole wheat dinner roll

Short pasta of choice

Fresh basil sprigs (optional)
