A simple spring meal hubby came up with, Papa’s Tuna Salad with Bleu Cheese-Basil Wraps:

Hubby used arugula, iceberg lettuce, fresh rosemary, fresh parsley, black olives, white onion, avocado, and cherry tomatoes for the salad. The dressing of choice was sesame thousand island. He added bleu cheese-basil tortilla wraps to complete the meal.

This Chicken Salad is one of the offerings at one of the local chain stores. Although smaller salads have been available for quite some time, this version may be a response to the demand to include “healthier” alternatives at local fast food chains. The dressing options were creamy sesame or lemon vinaigrette, this one has the sesame dressing. (I wonder if this is the same salad being offered globally?)

This dish is a combination of leftover Pork Tetrazzini and Chicken and Dumplings on a bed of Parsley Golden Rice, Leftover Mix on Golden Rice :

Here is another version of the Bento#7 and Bento#10 group. This one has sanma (saury) instead of fried chicken or pork cutlet.

This dumpling or fitter style snack, Takoyaki, is made with batter and pieces of octopus that are cooked in a special cast iron pan and covered in sauce. This version is topped with grated bonito and seaweed flakes.

If you’ve been keeping up with the latest posts, than you are aware that we haven’t had time to do much cooking this week. Sometimes large quantities of bentos are acquired for group events, and occasionally we end up with leftovers. Here is a recreation hubby came up with for the onigiri bento, Papa’s Onigiri Fried Rice:

Hubby chopped-up the various meats; divided the onigiri; added some curry powder; and quick fried all the ingredients in a wok.

This is more of a quickie snack-type bento than the regular meal-type featured in previous photos. This one had two different flavored onigiri (rice balls) wrapped in nori (seaweed), as well as daikon (radish), deep-fried ika (squid), chicken, and white fish, and fried pork luncheon meat.
