This is a simple and tasty meal hubby created using leftovers, Papa’s Creamy Herb-Chicken Stew:

For the meal, hubby used boiled chopped potatoes, carrots, and fresh broccoli; added leftover Crockpot Herb-Chicken with stock, cream, and flour for thickening; and served over rice.

Equipment and All Ingredients Needed

2 Frying pans 1 Microwave 2 Stovetop Burners 1 Can opener

1 Microwaveable container with lid 1 Knife 1 Cutting board

2 Small potatoes

1 Small bell pepper

1 /4 White onion

1 Can tuna with oil

2 Tablespoons scallions

1 Tablespoon fresh basil leaves

1 Tablespoon julienned pickled ginger

1 Tablespoon white pepper

1 Tablespoon butter

2 Teaspoons balsamic vinegar

1 Teaspoon dried tarragon flakes

1 Teaspoon minced garlic paste

Whole wheat dinner rolls

Minced garlic paste

Eggs (optional)

Cracked black sesame seeds

With the weather changing, hubby thought he’d give the crockpot a go and did some experimenting with overnight cooking, Papa’s Crockpot Herb-Chicken Wraps:

For the meal, hubby mixed chopped fresh basil and rosemary, olive oil, dried tarragon flakes, white pepper, minced garlic paste, freshly-squeezed shikwasa juice, and chicken broth granules; poured the mixture over frozen chicken wings placed in the bottom of a crockpot; and cooked on low for 16 hours. Once done, the chicken meat literally fell off the bones. Hubby drained the liquid (sort of) from the chicken with a spoon; seperated the meat from the bones; and placed the meat in heated tortillas lined with iceberg lettuce and cheddar cheese. As an accompaniment, he added whole cherry tomatoes.

This is another of those “almost too simple” meals that is tasty and filling, Red Beans & Rice Soup Dinner:

Simply sauté sliced pork sausage in olive oil and diced white onion; add diced bell pepper, fresh rosemary and chopped basil leaves, minced garlic paste, chopped scallions, canned diced tomatoes, chicken broth, cayenne pepper, and leftover red beans and rice. Bring to a boil; reduce heat and simmer for about ten minutes; plate and add a whole grain dinner roll as an accompaniment.

This is a simple, quick, and tasty meal with ingredients easily found in most kitchens, Papa’s Pepper Pork Pasta:

For the meal, hubby sauteed sliced pork sausage in olive oil, added julienned homegrown bell peppers, chopped fresh Enoki mushrooms, dried garlic chips, chili pepper flakes, fresh rosemary sprigs, chopped fresh basil, and powdered thyme; then tossed the mixture with spaghetti; and sprinkled with parmesan cheese. As an accompaniment, garlic toast slices.

Although I’ve been trying to include videos with meals, this dish was just too quick and simple to have time to take footage, Grilled Beef on a Stick Dinner:

The meal consisted of grilled thinly-sliced skewered beef with a whole grain mustard, soy sauce, cayenne pepper, and minced garlic paste dipping sauce; red chili beans and sauce mixed with leftover precooked rice and chopped scallions; melted cheddar cheese and fresh homegrown basil leaves tortilla wraps; and a simple salad of iceberg lettuce, chopped cherry tomatoes and scallions, and bacon bits drizzled with a creamy sesame seed dressing.

For this meal hubby baked individual shrimp loafs concocted from minced shrimp, pork sausage, olive oil, panko, egg, whole grain mustard, chopped fresh basil, fresh rosemary, dried parsley flakes, and white pepper. To accompany the dish, a bed of frozen spinach and dried garlic chips sautéed in olive oil and chicken broth granules then topped with cherry tomato slices; and leftover precooked rice garnished with cracked black sesame seeds.

With the weather getting a bit more nippy in the evenings, hubby created a delightfully tasty way to get warm, Papa’s Chunky Cream Soup:

For the soup hubby used sliced potatoes, thinly sliced beef, chopped bacon and fresh mushrooms, diced onion, fresh rosemary, dried parsley and oregano flakes, powdered thyme, white pepper, cream, and a tad of olive oil. As an accompaniment, buttered whole wheat dinner roll slices.
