Here’s another original creation from hubby, Papa’s Chicken and Potato Dinner:

For this beautifully plated meal, hubby made potato patties mixed with flour and finely diced onion; topped with chicken sautéed in salad oil and sprinkled with white pepper; added quartered cherry tomatoes and homegrown arugula; and smothered the entrée with canned mushroom gravy.

This is what I call a Japanese-style “frozen” dinner, Insta-Dinner:

The meal consisted of frozen okonomiyaki from Osaka and frozen spinach in wonton wrappers that were “cooked” in a microwave and instant miso soup. The only thing that wasn’t instant or premade was the sauce for the spinach wontons which consisted of soysauce, white wine vinegar, sesame oil, and topanjyan paste.

Here’s my version of one of hubby’s favorite no-fuss quickie snacks, Mama’ s Mini-Sandwich:

This version of mini-sandwich had horseradish and whole-grain mustard on a whole wheat dinner roll, topped with iceberg lettuce, fresh basil, sliced cherry tomato, ham, and onion cheese (tastes just like onion chip dip).

This is a switch on the typical pepper-steak that hubby created, Papa’s Sake-Miso Beef:

This is another choice in the “oba-style” bentos with mackerel, kamaboko, pumpkin, daikon-carrot mix, fried chicken, soy bean-hijiki mix, umeboshi, and rice.
