Although there are quite a few ingredients, this is a delightfully simple and tasty meal, Golden Maple Chicken Dinner:

Equipment and All Ingredients Needed

2 Frying pans 1 Microwave oven 2 Stovetop Burners 1 Can opener

1 Microwaveable container with lid 1 Knife 1 Cutting board

1 Large boneless chicken thigh

1 Can corn niblets

1 Small can sliced button mushrooms

2 Cups pre-cooked rice

3 Tablespoons maple syrup

2 Tablespoons olive oil

1 Tablespoon sesame oil

1 Tablespoon minced garlic paste

1 Tablespoon soy sauce

1 Tablespoon scallions

1 Tablespoon white pepper

1 Tablespoon almond slivers

1 Tablespoon butter

1 Teaspoon minced ginger paste

1 Teaspoon dried parsley flakes

1/2 Teaspoon chili powder

1/4 teaspoon turmeric

Fresh basil sprigs

Cranberry sauce

This is a delightful meal created by hubby, Papa’s Pork and Tomato Sauce Dinner:

For the meal, hubby marinated sliced pork in apple juice, ginger, white pepper, and soy sauce; then sautéed the pork in butter with the marinade adding chopped cherry tomatoes; plated the pork on a bed of fresh homegrown arugula; and drizzled the remaining sauce over the pork and some freshly cooked rice. As a side dish, he boiled sliced carrot and potatoes in sea salt water; drained and sautéed the veggies with sliced bell pepper in sesame oil.

This is another of hubby’s home cooked creations, Papa’s Shrimp & Spinach Dinner:

For the meal hubby, steamed shrimp; placed it on a bed frozen spinach sautéed in olive oil with bacon, white pepper, and minced garlic paste; topped with a sauce of cream, mayonnaise, chopped cherry tomatoes and onion, minced ginger paste and chopped fresh basil. As an acompaniment, julienned fresh mushrooms and bell peppers sautéed in sesame oil. Completing the meal was precooked rice garnished with cracked black sesame seeds.

Here’s another simple, tasty, and filling meal put together by the two of us, Tuna Salad Dinner:

For the meal, hubby created a salad of iceburg lettuce, sliced homegrown mini-piman, homegrown arugula and salad greens, chopped avocado, quartered cherry tomatoes, herbed croutons, chopped garlic chives, bacon bits, and drained canned-tuna tossed with creamy cheese dressing. As an accompaniment, I prepared a can of clam chowder mixed with 1/4 cup cream and 1/2 cup milk; then garnished with dried parsley flakes; and toasted whole wheat dinner roll strips.

A little something easily put together with leftovers, Pork Adobo on Rice:

For the snack, simply top leftover pre-cooked rice with leftover pork adobo meat; add some extra frozen Mediterranean veggie mix; heat the dish in the microwave; then top with zasai and grated parmesan cheese.

This is a light and tasty, yet filling, meal hubby came up with to make use of some of those T-day leftovers, Papa’s Turkey Salad Dinner:

For the meal, hubby chopped leftover turkey; added iceberg lettuce, homegrown arugula and salad greens, chopped cherry tomatoes, avocado, cucumber, and scallions, and bacon bits; tossed and drizzled with a creamy cheese dressing. As an accompaniment, he added a sliced toasted whole wheat dinner roll.

1 Colander 1 Knife 1 Cutting board

1½ Cups frozen grilled Mediterranean vegetable mix

½ Pound pre-cooked pork

½ Cup water

¼ Cup red wine vinegar

3 Tablespoons soy sauce

2 Tablespoons scallions

1 Tablespoon minced garlic paste

1 Tablespoon white pepper

1 Teaspoon dried cilantro flakes

1 Teaspoon bleu cheese

1 Whole wheat dinner roll

Pasta of choice

Grated parmesan cheese
